What do you serve up on Christmas Day?
Traditional Turkey Dinner, which ever country I’m in.
What’s your festive ‘never goes wrong’ recipe?
Mulled wine! Add bottle of red wine into a large pan, add 2 cinnamon sticks, 4 star anise, 4 Cloves, 2 sliced oranges, 2 sliced lemons, 75g brown sugar. Gently heat pan and serve.
Do you have a kitchen cheat? Something that looks like it takes ages but is actually quick and easy?
20 minute Chicken and pepper madras for 4. Wash basmati rice season and bring to boil, simmer for 15 mins. Cube 4 chicken breasts, stir fry in olive oil. Dice a pack of 3 colourful peppers and onions in a separate wok stir fry in with garlic and olive oil. To the chicken stir in a 1/3 jar of Pataks paste add a tin of chopped tomatoes, add water to suit your preferred consistency, add peppers. Serve with rice. Voila.
