Martini grand master Alessandro Palazzi shares his secrets at Royal Institution

The man who created what’s been hailed as the world’s greatest martini headed to Liverpool for an exclusive masterclass at the Royal Institution private members’ club.

Alessandro Palazzi, bar manager at the world-famous Dukes bar in London, is an absolute legend in the cocktail world.

His biggest claim to fame are his two signature James Bond martinis, served at the bar where 007 writer Sir Ian Fleming first coined his hero’s iconic phrase, “shaken, not stirred.”

The Vesper is in honour of the real-life Vesper Lynd, Polish-born wartime spy Christine Granville, and the Fleming 89 was inspired by Bond’s signature Floris No. 89 Eau de Toilette.

Alessandro is the grand master of martinis, and he came to Liverpool to see the newly-opened Royal Institution showing guests just how it’s done. If you thought it was just a simple case of pouring and shaking, think again. With Alessandro, it’s as much about theatre as it is about a to-die-for taste.

A cocktail made by him isn’t just a drink, it’s an unforgettable experience, which is exactly why Royal Institution owners were keen to bring him to Liverpool for the day.

“In the drinks world, everyone knows Alessandro, he’s the best of the best,” says co-owner Ryan McMahon. “He’s so widely respected in the industry, but customers love to watch him work too because he’s a real genius behind the bar.

“When we launched Royal Institution, we promised members that we’d be putting on unique events, something entirely new for the city, and this fits in perfectly with that idea.”
